FOR SOME UNKNOWN reason it seems that every "Ben's Cookies" shop within a 25 mile radius of me has shut down. I'll never understand why, surely they can't have gone into admin because come on?! Ben's Cookies are without a doubt the best cookies I have ever tasted, ever. Cookies that good can never go out of business. They have that perfect combination of cookie crumble and ooey gooeyness in the middle and whenever I visit a counter, I have to stop myself from buying one in every flavour. Turns out they now offer a delivery of said scrummy cookies but the delivery is almost as much as the cookies itself. So instead, my lil sis and I decided that we would have a go ourselves. "Lola's Cookies" if you will. Cookies in some ways are like cupcakes, in that you can be as experimental as you like with the flavours, whether they work as well as you had imagined can only be determined after consumption, a lesson I have learnt from this is that marshmallow and cookies-not so great!
If you like to have a go, follow the instructions below.
Ingredients for Cookies
100g caster sugar
175g plain flour
1/2 tsp baking powder
150g plain chocolate
The ingredients that I have listed above is just for the cookies and is for one batch (you would make around 15-18) and what you add to this basic ingredients depends on what cookies you would like to bake, so for chocolate chip you would need.. errr chocolate chips, for the double chocolate I added 1 tblsp of cocoa powder and 150g of white chocolate and so on. It's pretty simple.
*the recipe I have listed above is for chocolate chip cookies, if you wish to attempt any of the above omit the chocolate for 2 tubes of smarties for smarties cookies, 100g of oats and 50g of raisins for oatmeal and raisin, 100g of mini marshmallow (though I don't recommend it as they do not taste good, you have been warned!) and finally for the double chocolate you will need to use 150g white chocolate and add 1 tblsp of cocoa powder to the mixture.
